Turon
Banana and jackfruit rolled and fried in sugar that caramelises onto the wrapper.
Vegan.
Ingredients
- 8 saba bananas, or 4 firm plantains, halved lengthways
- 100 g sweetened jackfruit, in strips
- 16 lumpia wrappers
- 200 g brown sugar
- 600 ml oil, for frying, which is poured off
Method
- USE SABA BANANAS, or plantain. A dessert banana collapses into paste in the oil — saba stay firm and are starchy rather than sweet, which is why the sugar is on the outside.
- ROLL EACH BANANA HALF IN BROWN SUGAR before wrapping, so it is coated.
- Lay a wrapper, put the sugared banana and a strip of jackfruit on it, fold the sides in and roll tightly. Seal with a smear of water.
- Heat the oil to 175C and SCATTER A HANDFUL OF BROWN SUGAR INTO THE OIL ITSELF just before the rolls go in.
- That sugar in the oil is the dish. It melts and catches onto the wrapper as the turon fries, giving a brittle caramel shell that sugar on the inside alone never produces.
- Fry 3 minutes, turning, until the wrapper is blistered and the caramel has set amber. Watch it — sugar in oil goes from amber to black quickly.
- Lift onto a rack, NOT paper, or the caramel sticks and tears off. Eat within minutes. Pour the oil off once cooled.
