Method

  1. IT IS ROLLED, AND IT IS ROLLED WARM. A cold sponge cracks along the outside of every turn, and there is no hiding it once it is cut.
  2. Whisk the eggs, sugar and salt over hot water until tripled and ribboning, about 8 minutes. Fold in the sifted flour, then the melted butter.
  3. Spread in a lined 25 by 35 cm tray, no thicker than 1 cm, and bake at 190C for 9 to 11 minutes. It should be barely coloured and still springy.
  4. TURN IT OUT ONTO SUGARED PAPER WHILE HOT, peel the lining off, and roll it up loosely WITH the paper inside. Leave it rolled until cool. It learns the shape this way and will not fight you later.
  5. Beat the filling ingredients to a smooth cream.
  6. Unroll gently, spread the cream thinly -- thickly and it squeezes out of the spiral -- and re-roll without the paper.
  7. Chill 1 hour, roll in caster sugar, and cut 2 cm slices with a serrated knife.
