Ingredients

Method

  1. THERE ARE NO NOODLES IN THIS. The 'pancit' is the wonton wrapper, and anybody expecting a noodle soup from the name will be surprised — which is worth saying on the page.
  2. Mix the pork, chopped prawns, egg and spring onions for the filling.
  3. Put a teaspoon on each wrapper and PINCH IT CLOSED AT THE TOP WITHOUT SEALING THE SIDES FLAT, so it keeps a loose pouch. A tightly flattened parcel cooks to a hard edge.
  4. Some of the filling is left unwrapped and dropped into the broth loose, which is normal and gives the soup body.
  5. Fry the garlic and onion in the oil, reserve half the garlic, then add the broth and the shredded chicken and bring it to a simmer.
  6. DROP THE DUMPLINGS IN AND COOK 4 MINUTES ONLY, at a bare simmer. A rolling boil tears the wrappers open and you get broth with mince in it.
  7. Season with fish sauce and serve with the reserved fried garlic and spring onion.
