Method

  1. TWO DOUGHS, ROLLED TOGETHER, so the slice shows a spiral. Make the full quantity, divide it in half, and work the cacao and ground peanuts into one half only. Mixed into a single brown dough you have a chocolate suman; rolled together you have this.
  2. BOTH DOUGHS MUST BE THE SAME STIFFNESS or the roll tears. The cacao absorbs liquid, so the chocolate half will need an extra 2 to 3 tablespoons of coconut milk worked in. Judge it by feel against the plain half, not by the recipe.
  3. Wilt the banana leaves over a flame until limp and glossy, or they split when folded.
  4. Mix the rice flour, coconut milk, sugar and salt and cook it in a wide pan over a low heat, stirring constantly, 12 to 15 minutes, until it is a stiff paste that comes away from the pan in one mass.
  5. Divide it. Work the cacao and peanuts into one half while it is still warm, with a wooden spoon and then with oiled hands.
  6. Cool both halves 15 minutes, until handleable.
  7. Roll each half out on oiled plastic into a sheet 20 cm by 15 cm and 8 mm thick. Lay one on the other and roll them up from one long side, firmly, with no air between.
  8. Cut the roll into 5 cm lengths with an oiled knife. Each cut face should show the spiral.
  9. Wrap each piece in a leaf, fold the ends under, and tie two together back to back.
  10. Steam 45 minutes. Cool 10 minutes before opening -- hot, the dough sticks to the leaf and the spiral smears.
