Maiz con hielo

Nothing is cooked and nothing is stirred: it is built in the glass in layers.

Vegetarian, but not vegan — contains dairy (evaporated milk).

Ingredients

Method

  1. THIS IS ASSEMBLY, NOT COOKING. The only heat anywhere near it was whatever cooked the corn, and that must be completely cold before you start.
  2. Toss the corn with 2 tablespoons of the sugar and chill it thoroughly.
  3. SHAVE THE ICE, do not crush it. Shaved ice takes up the milk and eats like a soft snow; crushed ice sits in lumps with milk running past it, which is a different and much worse drink.
  4. Put a spoonful of corn in the bottom of each tall glass.
  5. Pack shaved ice in to the top, mounding it.
  6. Spoon the rest of the corn over, scatter the remaining sugar, and POUR THE COLD MILK OVER AT THE TABLE. Poured in the kitchen it has already melted a third of the ice before it arrives.
