Lengua de gato

A piped batter so loose it spreads itself thin, which is why they are never rolled.

Egg. Vegetarian, but not vegan — contains egg, dairy (butter).

Method

  1. THIS IS A BATTER, NOT A DOUGH, and it is never rolled or cut. It is piped, and it spreads on its own in the heat until it is as thin as it needs to be.
  2. Beat the butter and icing sugar until very pale and light, 4 to 5 minutes. This is the only aeration it gets.
  3. Add the whites one at a time, beating well between. It may look curdled; carry on and it comes back.
  4. Fold in the flour, salt and vanilla to a smooth, slack batter.
  5. Pipe 5 cm fingers through a 1 cm plain nozzle, WELL APART -- they double in width. Six to a tray, not twelve.
  6. Bake at 180C for 8 to 10 minutes. They are ready when the rims are brown and the middles still fair; the colour difference is the whole look of them.
  7. Lift them off while hot -- cooled on the tray they weld to it -- and they will be limp for a minute and then snap.
