Small dense muffins with a sunken ring round the dome, baked in a hot oven that drops.
Egg. Vegetarian, but not vegan — contains egg, dairy (condensed milk).
Ingredients
- 250 g plain flour
- 180 g caster sugar
- 3 eggs
- 150 g condensed milk
- 120 ml oil
- 100 ml water
- 2 teaspoons baking powder
- 0.25 teaspoon salt
Method
- A HOT OVEN THAT DROPS. In at 200C for the first 8 minutes to throw the dome up fast, then down to 170C for the rest. All the way at 170C they rise slowly and come out flat; all the way at 200C the ring burns before the middle sets.
- The sunken ring round the dome is what the shape is: it happens on its own if the tins are filled nearly to the top and the first blast of heat is hot enough. Filled two-thirds, you get an ordinary muffin.
- Beat the eggs and sugar 3 minutes until thick and much paler.
- Condensed milk, oil and water in, beaten until completely smooth. The batter is thin -- thinner than a muffin batter usually is -- and that is correct.
- Flour, baking powder and salt sifted in and folded just until no dry flour is left. Beaten at this stage they go tough and tunnel.
- Rest the batter 15 minutes.
- Grease the tins properly, including the flat top between the cups, because the ring spreads over it.
- Fill almost to the brim. Bake 8 minutes at 200C, then 12 to 14 minutes at 170C, without opening the door in between.
- Out of the tins within 2 minutes of coming out of the oven. Left to cool in them, the sunken ring steams and tears off when you lift them.
