Ice scramble
Shaved ice beaten with milk to a pink slush, not layered like a halo-halo.
Vegetarian, but not vegan — contains dairy (evaporated milk), dairy (milk).
Ingredients
- 1.2 kg finely shaved ice
- 250 ml evaporated milk
- 100 g caster sugar
- 0.5 teaspoon banana essence
- 2 drops red food colouring
- 4 tablespoons powdered milk, to finish
- 4 tablespoons chocolate syrup, to finish
Method
- BEATEN, NOT LAYERED. This is where it parts company with the halo-halo already on this site: there the ice sits on top of its toppings and you dig down, here the ice and the milk are worked together into one pink slush before anything goes on it.
- The ice has to be SHAVED, not crushed. Crushed ice gives you cold lumps in thin milk; shaved ice takes the milk up and holds it.
- Stir the sugar into the evaporated milk until it has completely dissolved. Grains left in it stay gritty, because nothing from here on is warm.
- Essence and colouring into the milk, and mix until the colour is even. Straight onto the ice it streaks.
- Put the ice in a wide bowl, pour the milk over, and beat with a wooden spoon for a full minute. It thickens as you go and should end up pourable but not runny -- the consistency of a thick milkshake.
- Into glasses at once, heaped above the rim.
- Powdered milk dusted over, then the syrup. Both go on last and neither gets stirred in.
