Apas

Rolled thin enough to see light through, and sugared before it goes in, not after.

Egg. Vegetarian, but not vegan — contains egg, dairy (butter), dairy (milk).

Ingredients

Method

  1. ROLL IT THINNER THAN FEELS SENSIBLE -- 2 mm, thin enough to see the worktop through it. Apas is a crisp biscuit, and at 3 mm it comes out as a soft one.
  2. Beat the butter and sugar, then the egg, then the milk.
  3. Work in the flour, baking powder and salt to a soft dough and chill it 30 minutes.
  4. Roll out on a floured surface and cut ovals about 8 cm long.
  5. SUGAR THEM NOW, before baking, pressing it on lightly. Sugar scattered on afterwards simply falls off; sugar baked on fuses into a thin crust.
  6. Bake at 170C for 12 to 14 minutes, until the edges are tan and the centres pale.
  7. They crisp as they cool. Any that bend when cold were rolled too thick.
