Uovo Sbattuto

A yolk and sugar beaten raw to a pale foam, with no heat at all.

Egg. Vegetarian, but not vegan — contains egg.

Ingredients

Method

  1. Separate the yolks and let them come to room temperature. Cold yolks will not take air.
  2. Put them in a small bowl with the sugar and salt.
  3. BEAT WITH A FORK IN ONE DIRECTION FOR FIVE MINUTES. By hand and by fork, not a whisk and not a machine — the bowl is too small for either to catch properly.
  4. It goes from orange and liquid to pale yellow and thick, and roughly doubles. It is ready when it holds a ribbon on the surface for a second.
  5. THERE IS NO HEAT AT ANY POINT. A zabaione is the same two ingredients with marsala, cooked over water to a hot foam; this is raw, and the whole thing takes five minutes in one bowl.
  6. The eggs are eaten raw, so use the freshest you can get, and leave it out for anyone pregnant, very young, elderly or unwell.
  7. Eat it straight from the bowl with a biscuit to dip.
