Ciambella

A plain ring cake raised with baking powder, mixed in one bowl in five minutes.

Egg. Vegetarian, but not vegan — contains egg, dairy (milk).

Ingredients

Method

  1. Whisk the eggs and sugar for 3 minutes until pale.
  2. Whisk in the oil and milk, then fold in the flour, baking powder, salt and lemon zest.
  3. THERE IS NO YEAST AND NO PROVING. That is the point of a ciambella against the three doughs it sits beside on this list: it is the cake you make when somebody is coming in an hour, and it is mixed in one bowl.
  4. Pour into a greased and floured 24 cm ring tin and scatter the granulated sugar over.
  5. Bake at 175C for 35 to 40 minutes until a skewer comes out clean.
  6. Cool 10 minutes in the tin before turning out. It keeps three days and is best with coffee.
