Fanta cake
Part of the rise is the fizz in the drink, which the article says outright.
Egg. Vegetarian, but not vegan — contains egg, dairy (butter), dairy (double cream), dairy (soured cream).
Ingredients
- 250 g butter, softened
- 250 g caster sugar
- 4 eggs
- 300 g plain flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 200 ml Fanta, cold
- 400 g tinned mandarin segments, drained
- 400 g soured cream
- 300 ml double cream
- 2 tablespoons icing sugar
- 1 teaspoon vanilla extract
Method
- PART OF THE RISE IS THE FIZZ IN THE DRINK, WHICH THE ARTICLE SAYS OUTRIGHT: THE PRIMARY INGREDIENT IS FANTA, WHICH MAKES IT FLUFFIER THAN TYPICAL SPONGE CAKES DUE TO THE DRINK'S CARBONATION.
- SO THE DRINK GOES IN COLD AND LAST, AND THE TIN GOES STRAIGHT INTO THE OVEN. Carbon dioxide leaves a warm batter within minutes; every minute the bowl stands is lift thrown away.
- WHICH MEANS NO BEATING AFTER IT IS IN. Fold it through in a few strokes and stop while the batter still looks streaky. Beaten smooth, the bubbles are gone and it is an ordinary orange sponge.
- AND THE FLAT ONES DO NOT WORK, which follows from the same fact. A bottle that has been open since yesterday has nothing left to give.
- THE BAKING POWDER STAYS IN. The fizz is PART of the rise, not all of it -- the article says fluffier than typical, which is a comparison and not a replacement.
- CREAM THE BUTTER AND SUGAR PROPERLY FIRST, five minutes, because that air is the part that does not escape.
- BAKE IT AS A SHEET AT A HUNDRED AND EIGHTY FOR TWENTY-FIVE MINUTES. A deep tin traps the gas lower down and bakes unevenly.
- COOL IT COMPLETELY BEFORE ANYTHING GOES ON TOP. The topping the article gives is A CREAMY LAYER MADE OF HEAVY SOUR CREAM, WHIPPED CREAM OR SUGAR, or else A SIMPLE LEMON GLAZE.
- FOLD THE WHIPPED CREAM INTO THE SOURED CREAM RATHER THAN THE OTHER WAY, and only to soft peaks: soured cream is heavy and will knock the air out of over-whipped cream.
- THE MANDARINS GO ON DRAINED AND DRY, pressed lightly into the cream. Wet segments bleed and the top goes orange in patches. The article has it SERVED AT BIRTHDAY PARTIES OR CELEBRATIONS, which is where a cake made with fizzy pop belongs.
