Method

  1. IT IS ENRICHED WITH MILK AND EGGS, UNFERMENTED, AND BROWNED ON BOTH SIDES. Its Preparation section lists a batter of FLOUR, MILK, EGGS, SUGAR, AND SOMETIMES HONEY AND SPICES SUCH AS CARDAMOM AND CINNAMON, WITH A PINCH OF SALT, MIXED UNTIL SMOOTH, and cooked ON A LIGHTLY GREASED FRYING PAN WITH BUTTER OR OIL UNTIL GOLDEN BROWN ON BOTH SIDES.
  2. WHICH IS THE WHOLE DISTANCE BETWEEN THIS AND LAHOH, AS ON ITS OWN PAGE. That one is sorghum, water and yeast, left overnight and cooked on one side only. This one is milk, eggs and sugar, mixed and cooked at once, and turned. Two pancakes from the same kitchens with nothing in common but the pan.
  3. SO THERE IS NOTHING TO WAIT FOR AND NOTHING TO GO WRONG OVERNIGHT. Mixed, rested twenty minutes to let the flour drink, cooked.
  4. CARDAMOM IS THE FLAVOUR THE ARTICLE NAMES. It describes it as similar to a sweet crepe and FLAVORED WITH CARDAMOM. A whole teaspoon in this quantity, which is more than it sounds.
  5. MIX IT SMOOTH AND POURABLE. Flour and sugar, then the eggs, then the milk in stages so it does not lump. It should coat a spoon thinly.
  6. A LIGHTLY GREASED PAN, NOT A DRY ONE. The article says butter or oil, and this is the opposite of injera and lahoh, which take a dry pan.
  7. POUR, SPREAD THIN, AND TURN IT WHEN THE EDGES COLOUR. Two minutes, then one. Both sides golden, which is the article's test.
  8. IT IS PLATE-SIZED AND IT IS SERVED WITH HONEY. The article has it a PLATE-SIZED SWEET PANCAKE eaten for breakfast or as a snack at any time, typically served with honey.
