Gored gored

The beef is cubed and left unmarinated, and the fat stays on it.

Beef. Not vegetarian — contains beef.

Method

  1. THE BEEF IS CUBED AND LEFT UNMARINATED, AND THE FAT STAYS ON IT. Its article draws the line against kitfo twice. WHEREAS KITFO IS MINCED BEEF MARINATED IN SPICES AND NITER KIBBEH, GORED GORED IS CUBED AND LEFT UNMARINATED; and again, it is PREPARED WITH CUBED RATHER THAN MINCED BEEF AND SEASONED WITH BERBERE AND AWAZE BUT NOT MARINATED.
  2. SO THE SEASONING MEETS THE MEAT AT THE TABLE, NOT IN THE BOWL. Cubes have a tenth of the surface of mince: marinating them would season the outside and leave the middle plain, so the berbere goes on at the end and the awaze sits beside it.
  3. AND THE FAT IS NOT TRIMMED. The article is explicit that USUALLY, THE FAT IS LEFT ON THE MEAT AND EATEN WITH IT, which is why a well-marbled sirloin or rump is the cut and not a lean fillet.
  4. CUT IT INTO TWO-CENTIMETRE CUBES WITH A SHARP KNIFE. Even sizes, because they are eaten one at a time and a small one next to a large one eats wrong.
  5. KEEP IT COLD UNTIL THE MOMENT IT IS SERVED. A cold bowl, straight from the fridge, and out for minutes rather than an hour.
  6. WARM THE NITER KIBBEH AND POUR IT OVER AT THE TABLE. Just pourable. It coats rather than soaks, which is the difference you can taste between this and kitfo, as on its own page.
  7. SCATTER THE BERBERE AND SALT LAST AND DO NOT STIR IT THROUGH. Dry spice on the surface is the dish; stirred in it becomes a marinade and this is not one.
  8. THE AWAZE AND THE LEMON GO BESIDE, NOT ON. The article has it served with awaze chilli sauce and lemon wedges, each cube dipped as it is taken.
